This micro-lot is a selection of Catimor, Caturra and Typica varieties. Like all Timor-Leste coffees, it is shade grown and farmed organically by tradition. Soon after picking on the same day, this selection was natural processed on raised drying tables or patios.
Once moisture is reduced to ideal levels, parchment is delivered to Railaco Station for milling, density, colour and hand-sorting to remove imperfect beans prior to export.

I have found Sakoko to be an exceptional bean for flavours of fruits, dark berry tones, A lovley, slightly sour, lingering after taste that is reminicent fresh blueberry. My favorite bean for a robust and interesting coffee different to the norm.
